Spicy salmon burgers
(makes 5)
INGREDIENTS

260g salmon fillets
-
1 white onion
-
3 garlic cloves
-
1 tblsp red thai curry paste
-
3 tblsp oats
-
Salt and pepper
-
2.5cm piece ginger
-
1 tblsp fresh basil
-
1 tblsp olive oil
-
1 tsp rosemary
-
¼ tsp cayenne pepper (optional)
-
1 tsp soy sauce
-
Lime wedges
-
Mixed salad
METHOD

Under the grill cook the salmon pieces for about 5 minutes, with the skin facing upwards, until soft and the skin can be easily removed

Peel the onion and chop into small pieces and add to a blender (or bowl if using a hand blender) along with the curry paste, oats, garlic cloves, ginger, salt, soy sauce, pepper and herbs

Next break the salmon into pieces and add to the mixture, blend/pulse the mixture until everything is finely chopped and mixed well

Form the mixture into 5 burgers and in a non-stick pan fry in olive oil for about 5 minutes each side until browned on both sides

I like to serve this with mixed salad, corn on the cob, lime wedges and asparagus, or you could have it as a burger with a roll if you prefer.
