Nutty cinnamon cookies
(makes 15)
INGREDIENTS
-
1 tsp cinnamon
-
2 bananas
-
1 cup chopped mixed nuts
-
2 tblsp pumpkin seeds
-
2 tblsp sunflower seeds
-
1 ½ cup oats
-
2 cups puffed spelt
-
½ cup solid coconut oil
-
½ cup maple syrup
-
Pinch of salt
-
1 tblsp chia seeds
-
2 tblsp crunchy peanut butter
-
½ cup wholemeal flour
Topping
-
2 tblsp honey
-
1 tsp cinnamon
-
2 tblsp solid coconut oil, melted
-
½ cup pecan nuts
METHOD

Preheat the oven to 180 degrees celcius

Peel the bananas, mash them and add to a large bowl
-
Spoon the coconut oil into a bowl and melt in the microwave for 2 minutes
-
Add this to the bananas, along with the rest of the cookie ingredients and mix well
-
Form into ball and flatten into cookie shapes, place on a baking tray and bake in the oven for 10-12 minutes

Remove the cookies once they start to brown and transfer to a cooling rack, depending on how big your oven tray is, I normally cook this mixture in 3 batches

Lastly mix the topping ingredients together, except the nuts, chop these into very small pieces

Drizzle the mixed coconut oil, cinnamon and honey over the cookies and sprinkle the chopped pecans over the top

Allow them to cool and enoy!
