Fresh & fruity mocktail

INGREDIENTS

  • Half fresh pineapple or 2 cups pineapple juice

  • 1 red apple

  • 1 pint sparkling water

  • 2 inches cucumber

  • 1/2 cup fresh thyme sprigs

  • 1 lemon

 

METHOD

  1. In a small pot add 1 cup hot water, break up the thyme into pieces and add to the pot, bring to the boil and simmer for about 1 minute until the flavour is infused and mix well, remove from the heat, then pop this in the fridge to cool completely

  2. Wash the cucumber and slice into thin rounds, place in a large jar with 2 pints of water, next squeeze the lemon juice into the jar and set aside

  3. Wash the apple well, and then cut off the ends and skin of the pineapple

  4. Using a juicer, juice the pineapple and apple together and add to the jar of lemon and cucumber (unless you are using pre made pineapple juice, simply add to the mixture)

  5. Remove the springs of thyme from the water once cooled, you can easily use a sieve for this and add to the jug, mix well

  6. Divide out into prepared glasses with crushed ice, filling it ¾ and then topping up with sparking water

  7. Serve ice cold and enjoy!
