Walnut vanilla smoothie

(makes 2 portions)


  • 1 tblsp flax meal

  • ¾ cup walnuts

  • half fresh avocado

  • 1 cup almond milk

  • 1 tblsp peanut butter

  • 1/2 tsp cinnamon

  • 2 tsp vanilla essence

  • 3 dates chopped

  • 3 ice cubes

  • 1 cup water

  • Maple syrup (optional for extra sweetness)



  1. Chop the dates into small pieces and in a mug add a little hot water so they can soak for a little while

  2. Next add all the ingredients to a blender and whizz on high speed until well blended and creamy, if it seems too thick you can always add a little more water

  3. If you have a big sweet tooth you might like to add a little maple syrup to the mix

  4. Pour out into glasses and add a few ice cubes, and for decoration a walnut and a sprinkle of cinnamon

  5. Enjoy!
