Sweetcorn fritters 

(makes 8)


  • 1 can sweetcorn

  • 2 tblsp coconut flour

  • 2 eggs

  • 1 tsp basil

  • 1 tsp marjoram

  • 2 spring onions

  • 1 cup grated mozarella

  • 2 tblsp olive oil

  • black pepper



  1. Chop spring onion and mix all ingredients (except the cheese) in a blender

  2. I don't blend it thoroughly because I like it quite chunky

  3. After blending stir in the cheese

  4. Add spoonfuls to a frying pan with oil and flip until both sides are brown

  5. I like to eat as small sandwiches with sweet chilli sauce and lettuce

  6. They can alse be eaten on their own with other sauces
