Sweet Potato Salad

(serves 3)


  • 30 baby tomatoes

  • 3 spring onions

  • 4 garlic cloves

  • ½  tsp paprika

  • ½ tsp cumin

  • Black pepper

  • 1 cup red cabbage

  • Handful of parsley, basil and mint

  • Olive oil

  • 2 large sweet potato



  1. Chop tomatoes into quarters and halves and place sin a large pan, then peel and chop the sweet potato and garlic into small pieces and add to pan

  2. Fry for about 2 minutes in olive oil then cover with a lid and town down the heat and allow to cook/steam for about ten minutes, if it seems to dry out, add a few drops of water

  3. Chop the spring onion and cabbage and add to a large bowl, add chopped herbs and the cooked sweet potato mix

  4. Mix well and enjoy!
