Super savoury porridge
(serves 3)
INGREDIENTS

Olive oil

200g chopped mushrooms

2 tsp black pepper

handful fresh kale, stalks removed

2 cups fresh spinach, chopped

1.5 cups (180g) oats

2 tblsp white miso paste
-
1 tsp thyme
-
3 garlic cloves
-
1 white onion
-
2 tblsp sunflower seeds

2 tblsp balsamic vinegar
-
½ pak choi
-
½ tsp chilli flakes
METHOD

In a cup or bowl add the miso paste with 500ml boiling water and mix well until completely combined and set aside

Rinse the pak choi and chop into pieces, and to a large pan with olive oil, the onion, garlic, and kale and cook for about 5 minutes until soft

Next add the sliced mushrooms, black pepper, thyme, chilli and cook for a further 5 minutes until browned and soft

Next add the oats and miso paste mixture, stir well and let to simmer for 5 minutes, once cooked, turn off the heat and mix in the chopped spinach to allow it wilt in the heat

Serve in to bowls and sprinkle with seeds, and enjoy!
