Super savoury porridge

(serves 3)

INGREDIENTS

  • Olive oil

  • 200g chopped mushrooms

  • 2 tsp black pepper

  • handful fresh kale, stalks removed

  • 2 cups fresh spinach, chopped

  • 1.5 cups (180g) oats

  • 2 tblsp white miso paste

  • 1 tsp thyme

  • 3 garlic cloves

  • 1 white onion

  • 2 tblsp sunflower seeds

  • 2 tblsp balsamic vinegar

  • ½ pak choi

  • ½ tsp chilli flakes

 

 

METHOD

  1. In a cup or bowl add the miso paste with 500ml boiling water and mix well until completely combined and set aside

  2. Rinse the pak choi and chop into pieces, and to a large pan with olive oil, the onion, garlic, and kale and cook for about 5 minutes until soft

  3. Next add the sliced mushrooms, black pepper, thyme, chilli and cook for a further 5 minutes until browned and soft

  4. Next add the oats and miso paste mixture, stir well and let to simmer for 5 minutes, once cooked, turn off the heat and mix in the chopped spinach to allow it wilt in the heat

  5. Serve in to bowls and sprinkle with seeds, and enjoy!
