Strawberry Coconut Pie

INGREDIENTS

Cheesecake base:

  • 1 cup dates, pitted

  • 1 cup almonds flour

  • ¾ cup desiccated coconut

Cheesecake layer:

  • 1¼ cup raw cashews (soaked overnight)

  • ¾  cup coconut cream

  • 4½ level tsp agar flakes

  • 5 tblsp lemon juice

  • 6 tblsp maple syrup

  • 2 tsp ginger paste

  • ¼  cup warm water

  • ½ cup aquafaba

 

Fruit layer:

  • 2 cups/400 g chopped fruit (strawberries in this case)

  • 2 level tsp agar flakes

  • ¼ cup water

 

METHOD:

Line the bottom of your spring form tin (mine was 6 ” across and 2.5 ” tall) with a circle of baking paper and cut out a long rectangle to line the sides with

 

Cheesecake base:

  1. Chop dates (unless your bought them pre chopped) and add a little hot water just to cover and soak about 2 minutes

  2. Add everything to a food processor and blend until smooth and mixed (depends on what you use I often prefer an immersion hand blender which is easier to deal with the sticky dates)

  3. Put the mix to the tin base and press  down well with your fingers to cover the whole base, press down everywhere so that there are no gaps or air-bubbles, and place it into the fridge while you make your cheesecake mixture

 

Cheesecake layer:

  1. In a blender add cashews, coconut cream, maple syrup, ginger, limon juice, and an extra ¼ cup of water and blend until mixed, leave, ready to add the extras

  2. Place agar flakes into a small pot, let the mixture come to the boil and simmer on low-medium heat, stirring frequently, until flakes almost dissolve and the mixture thickens then add the aquafaba and mix well (about 5 mins)

  3. Quickly pour into the blender and blend all together, then quickly pour over the base layer before the agar starts to set

  4. Set to the side while you prepare the fruit layer, I have put it back in the fridge for a bit before to set for a bit, but then once I poured the fruit layer on, this layer had set too much so they didn't set together and the top layer was almost quite loose, so now I just let it sit for a bit on the counter to slightly set.

 

Fruit layer:

  1. Chop fruit pieces and add to a clean blender and blend until smooth (no need to add any extra liquid as they have enough in them).

  2. Put ¼ cup of water into a small pot and add agar flakes, let the mixture come to the boil and simmer on low-medium heat, stirring frequently, until flakes almost dissolve and the mixture thickens (about 5 mins).

  3. Add agar mixture to the blender with the fruit and blend until smooth, then pour over the cheesecake layer and ensure it is level before placing back into the fruit

  4. Once the cake is set chop fruit as desired and decorate cake before serving
