Spicy Jackfruit & Beans

(serves 3)

INGREDIENTS

  • Olive oil

  • 1 tsp oregano

  • ½ tsp cayenne pepper

  • 1 can kidney beans

  • 1 tsp paprika

  • 1 can jackfruit

  • 1 cup chopped cabbage

  • 12 sundried tomatoes, chopped

  • 4 garlic cloves

  • 1 cup vegetable stock

  • 2 tsp black pepper

  • Pinch salt

  • 1 white onion

  • 1 red onion

  • ½ tblsp oyster sauce

  • 3 roasted red peppers (from jar)

  • 2 spring onions

 

METHOD

  1. Drain the jackfruit and chop into small pieces and add to a large frying pan with olive oil, add the chopped onions, cabbage, garlic and vegetable stock and cook for about 7 minutes until brown and soft (the 1 cup liquid from the stock should allow the mix to cook until soft and not dry out) 

  2. Chop the spring onions and the red peppers then add to the jackfruit along with all the spices, kidney beans, and sundried tomatoes

  3. Mix well and cook for a further 2 minutes, season to taste with salt and pepper and serve hot
