Spicy Chickpea Bites
(serves 3)
INGREDIENTS
SPICY SAUCE
-
5 cloves garlic
-
1 large roasted red pepper from a jar
-
4 spring onions
-
2 tsp mixed herbs
-
1/2 tsp. allspice
-
1/4 cup orange juice
-
1 tblsp white wine vinegar
-
Salt and Pepper to taste
-
1 tblsp lemon juice
-
½ tsp chilli flakes
-
5 sun dried tomatoes
CHICKPEA BITES
-
1 Can chickpeas, drained
-
1/2 cup plain rolled oats
-
2 tsp mixed herbs
-
2 tblsp vegetable broth
-
3/4 cup polenta for coating
-
Olive oil
METHOD

For the spicy sauce, add all the ingredients to a blender and process until the sauce is smooth and all the ingredients are very fine and paste/sauce like, and pour into a bowl and set aside

Wipe out processor, make the wings by adding everything except the polenta
-
Process until the mixture comes together and is dough like and form into oblong shapes, not too thick or they will not cook through

Heat about an inch of oil in a pan on medium high and while the oil is heating, roll the bites lightly in polenta then add to the pan of oil

Fry on each side for 2-4 minutes until crispy and brown and cooked through.

Remove from oil and set aside on a plate

In the frying pan heat the jerk sauce on medium for 2 minutes, stirring until it starts to bubble a little, then add the bites and toss in the sauce until they are all completely coated.

Serve immediately with dips of choice!
