Roasted nutty choc bites

INGREDIENTS

  • 100g almonds

  • 120g hazelnuts

  • 80g unsalted peanuts

  • 2 tblsp peanut butter

  • 2 tblsp cocoa powder

  • 100g 70% dark chocolate

  • 4 tblsp maple syrup

  • 5 soft dates

METHOD

  1. Preheat oven to 200 degrees Celsius

  2. Place the nuts on a large tray and in the oven for about 20 minutes until they start to smell delicious and toasty

  3. Chop the dates in quarters and place in a bowl with the roasted nuts and cocoa powder

  4. Use a hand chopper/blender to blend/crush the nuts into a chunky powder, depending on the size of your bowl you might have to this in two batches

  5. Break the chocolate into pieces and into a small bowl, then microwave for 1 and half minutes to melt

  6. Pour into the nut mixture, add the peanut butter and syrup and mix well

  7. Roll into small balls and place onto a large plate (they can be quite rich so don’t roll the balls too large)
