Roasted vegetable humus
INGREDIENTS

1 courgette
-
1 red pepper
-
Salt and black pepper
-
6 cloves garlic
-
1 cup live oil
-
2 cans chickpeas
-
2 tblsp honey
-
Juice from 2 lemons
-
Pinch smoked paprika
-
1 tsp dried oregano
METHOD
-
Pre heat oven to 200 degrees celcius
-
Roughly chop the courgette and pepper into pieces and place on a large roasting with the garlic, mix with oil and a sprinkle of salt and roast until veg starts to brown on the edges
-
Tip all the vegetables into a bowl and add the olive oil plus the chickpeas and lemon juice, salt, pepper and herbs with, the with a hand processor blend until smooth and well mixed

Transfer to the bowl sprinkle with paprika and black pepper

Enjoy with potatoes, vegetables sticks or bread.
