Roasted vegetable humus


  • 1 courgette

  • 1 red pepper

  • Salt and black pepper

  • 6 cloves garlic

  • 1 cup live oil

  • 2 cans chickpeas

  • 2 tblsp honey

  • Juice from 2 lemons

  • Pinch smoked paprika

  • 1 tsp dried oregano


  1. Pre heat oven to 200 degrees celcius

  2. Roughly chop the courgette and pepper into pieces and place on a large roasting with the garlic, mix with oil and a sprinkle of salt and roast until veg starts to brown on the edges

  3. Tip all the vegetables into a bowl and add the olive oil plus the chickpeas and lemon juice, salt, pepper and herbs with, the with a hand processor blend until smooth and well mixed

  4. Transfer to the bowl sprinkle with paprika and black pepper

  5. Enjoy with potatoes, vegetables sticks or bread.
