



Raisin cheesecake squares
INGREDIENTS
DOUGH LAYER:

2 cups oatmeal
-
1 cup finely chopped nuts

1 ½ cups coconut flour
-
1 ¼ tsp. cinnamon
-
1/2 tsp. salt
-
1 egg
-
1 cup raisins
-
5 tblsp honey
-
1 cups unsalted butter
-
2 tsp vanilla extract
-
¼ tsp nutmeg
-
1 tsp baking soda
CHEESECAKE FILLING:
-
420g cream cheese, softened
-
2 eggs
-
2 tsp. vanilla
-
4 tblsp honey
TOPPING
-
½ cup flaked almonds
-
½ chopped cup raisins
METHOD

Preheat oven to 170 degrees celcius and prepare a 7in x 7in baking tray lined with baking sheet

Mix honey, egg, butter, vanilla, nutmeg, cinnamon, salt and baking soda together.

Stir in flour, raisins, nuts and oatmeal with a wooden spoon.

Don’t use a mixer or cookies will be overmixed and toughen.

Spread about ⅔ of the mixture into the prepared tin
-
Mix the cream cheese ingredients together and spread cream cheese layer over top.

Sprinkle remaining dough over top.

Sprinkle with the topping nuts and raisins
-
Bake at 170 for 30-40 minutes, or until a toothpick inserted in center comes out clean.
