Rainbow nutty salad

(serves 4)


  • 2 carrots

  • 2 parsnips

  • ½ beetroot

  • 1 cup pecans

  • 1 tblsp honey (optional)

  • Juice from half lemon

  • 3 tblsp olive oil

  • 2 handfuls spinach

  • ½ cup omega mix

  • 3 spring onions

  • Black pepper


  1. Grate the carrots, parsnip and beetroot into a large bowl (I use an automatic grater as it is so much faster than hand grating)

  2. Chop the spinach into pieces and add to the bowl

  3. Remove ends and tops from spring onion, cut in half then slice into small pieces and add to the bowl

  4. Roughly cut up the pecans and add to the mix all the other ingredients, I add about half a tsp of pepper, but simply season to your preferred taste

  5. The omega sprinkle mix I use is basically made up of sunflower seeds, pumpkin seeds, chia seeds, and linseeds, so you can adjust this mix to your preffered tastes

  6. Mix well, serve and enjoy
