Plant based apple and cashew tart

I cannot believe its September already and I can’t help but notice there is a slight chill in the air, sitting at home with the doors open, the fresh breeze blowing through, the warm sun shining in and the happy birds tweeting away, I do find myself walking around in a very comfy warm jumper and thinking to myself autumn is definitely just around the corner.

One of the best things about the temperature dropping and autumn coming around is not only the communal house fires and creamy soups, but delicious fragrant pies, and in particular – APPLE PIES!

My version of an apple pie is slightly different, but tastes just as wonderful, as mine is a healthier plant based version and also doesn’t have too much excess sugar, because the wonderful thing about apples, is that they are naturally sweet, so I only add a little extra honey if needing a bit more sweetness, ready the full recipe here:

This recipe is really interesting to me, because I use delicious healthy cashews, which have high levels of iron, magnesium, zinc, copper, phosphorus, and manganese as well as good fatty acids that promote healthy levels of good cholesterol. I buy mine from Buy Whole Food Online, you can find these here ( to make the base, mixed with coconut and cinnamon, which gives a very delicious crunchy pie base for this tart.

This is a fairly simple recipe with not too many complicated ingredients, and 3 stages:

  • the base,

  • the puree and

  • the topping.

After you have made this once, it’s very easy for the next ten times for family and friends to share this with. Give it a try and I would love to hear you thoughts?

The ingredients used in this recipe are:


  • 3 apples

  • Juice from 1 lime

  • Cinnamon

  • A few cashew nuts


  • 1 cup cashews

  • 2 tblsp coconut flour

  • 2 cups desiccated coconut

  • ½ cup virgin coconut oil melted

  • 2 tsp vanilla paste extract

  • ½ cup almond milk

Apple puree:

  • 4 medium red apples

  • ½ cup hot water

  • 1 tblsp honey

  • 3 tsp coconut oil

  • 2 tsp vanilla extract

  • 1 tsp nutmeg

The flavours of this tart match so well together, that you can actually taste the cashew flavour in the base, if you would like a little extra sweetness, drizzle some honey on top or serve with a spoonful of coconut cream, or if you prefer even better, with ice cream!
