Plum & apple crumble
(serves 5)
INGREDIENTS

8 ripe plums

2 apples
-
1 cup raisins/sultanas

1 cup almond flour
-
½ cup oats
-
1 tsp cinnamon
-
1 tsp nutmeg
-
½ cup flaked almonds
-
½ cup coconut oil
-
1 tblsp almond milk
-
1 cup coconut flakes
-
½ cup peeled and chopped pistachios

Coconut or dairy cream
-
4 tblsp maple syrup
METHOD

Preheat the oven to 180 degrees celcius

De-stone the plums and core the apples
-
Chop the fruit into small pieces and place in a large glass dish 25cm x 15cm

Add the raisins, pistachios, 1 tsp cinnamon, 3 tblsp maple syrup and nutmeg and mix well

In a separate large bowl mix together, almond flour, 1 tsp cinnamon, 1 tblsp maple syrup, coconut flakes, oats and almond milk and mix well

Add the coconut oil to a bowl and melt in the microwave for 1 minute, mix the coconut oil well into the bowl of oat crumble mixture

Tip the mixture over the fruit in the glass dish and spread evenly

Bake in the oven for 45minutes

Remove from the oven and let cool for 15 minutes

Spoon out onto bowls and serve with either coconut cream or dairy whipped cream with a sprinkling of cinnamon
