Pistachio ice cream

INGREDIENTS

  • 1 cup coconut milk

  • 2.5 cups almond or oat milk

  • 2 tblsp honey

  • Pinch of salt

  • Half avocado

  • 1 ripe banana

  • ¾ cup raw pistachio butter (or raw shelled pistachio nuts blended with a little water to make a paste)

  • 1/2 cup chopped dates

  • 1 cup raw pistachios for topping

 

METHOD

  1. I buy the pre-made raw no additives pistachio butter as this makes life so much easier that peeling, and crushing pistachios, but if you do want to do that you will need about 1-2 cups raw pistachios to make enough of a paste

  2. Peel and mash the banana and add to a blender/processor

  3. Let the chopped dates soak in a little hot water for about ten minutes then add to the blender with the banana

  4. Add the rest of the ingredients to the blender and mix well

  5. Taste the mix and adjust the sweetness, you can add more honey if you prefer the mixture sweeter

  6. Pour out into smaller pre-prepared boxes (I prefer to do this as it is much easier to eat later one, just buy having a small box than pouring it it all into a large box, but this is up to you to choose your preference)

  7. Top the boxes of with a sprinkling of chopped pistachios, or any other toppings you might prefer, I like to use chopped coconut flakes and cacao nibs as well.

  8. Place the boxes in the freezer to set and enjoy!
