Pecan pie

INGREDIENTS

BASE:

  • 2 cups almond flour

  • 2 tbls coconut oil (melted a litte)

  • 3 tblsp flax

  • 1 egg

 

FILLING:

  • 1 tsp vanilla

  • 3 tblsp butter

  • 4 eggs

  • 3/4 cup honey

  • 1 cup mixed nuts

  • 2 cups pecans

  • 1 tsp baking powder

 

METHOD

  1. Preheat the oven to 200 degrees celsius and position rack in the middle.

  2. Mix base ingredients together then press dough into 9-inch pie dish, chill in the fridge while making the filling.

  3. Blend the nuts in a blender, but not too soft, leave a few chunky pieces.

  4. Melt the butter and then add all the filling ingredients together

  5. Pour filling mixture into the prepared pie crust and top with pecans. Cover crust with foil and bake for 15 minutes then reduce heat to 150 degrees and bake for an additional 15 minutes.

  6. When sticking a spike in it should come out clean, if not just put it back in the oven fo a few more
