Scrambled Herby Tofu

Peanut satay sauce
(serves 4)
INGREDIENTS

Half white onion
-
2 tsp chilli flakes
-
2 cloves of garlic, crushed
-
2/3 cup peanut butter (100%)
-
1tblsp honey
-
200ml coconut milk
-
1½ tblsp soy sauce
-
pinch of blac pepper and salt
METHOD
-
Roughly chop the onion and add to a bowl which can be used with a hand blender
-
Peel the garlic and add to the bowl too, next add the rest of the ingredients
-
blend until everything is mixed well, then scoop out into a frying pan and heat or 5 minutes
-
I fit is too thick you can thin it with extra coconut milk or hot water
-
Stir well and pour into a few small bowls to serve.
