Chocolate crunchies

INGREDIENTS

  • 3 very ripe bananas

  • 1 ½ cup wholemeal flour

  • ½ cup almond flour

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1 tsp vanilla extract

  • 2 tblsp flax meal

  • 2 tblsp solid coconut oil

  • 2 tblsp honey

  • 2 tblsp cider vinegar

  • Olive oil

  • 1 cup mixed nuts and seeds (pine nuts, pumpkin seeds, sunflower seeds, chia seeds)

 

METHOD

  1. Preheat the oven to 200 degrees Celsius, and line a rectangular baking tray with either olive oil or baking paper

  2. Peel the bananas and on a plate mash them together, add to a large bowl

  3. Add the rest of the ingredients, making sure you add the cider vinegar last, as this reacts to the other ingredients and starts to rise to so you want to mix the ingredients really quickly and pour into the prepared baking tin

  4. Level out the mixture and place in oven

  5. Bake for half an hour until golden brown on top and a skewer or thin knife comes out clean

  6. Remove from oven, and let it stand for 20 minutes to cool, remove from the tin and place on boar, cut into slices, If you try cut if while its to warm it won’t cut well and might crumble

  7. Eat as it is or top with jam and cream

  8. Enjoy!
