Lemon Poppyseed Loaf

INGREDIENTS

  • 4 eggs

  • 2.5 cups gluten free oats

  • ½ cup honey

  • 2.5 tsp baking powder

  • Pinch of salt

  • ¼ cup lemon juice

  • ¼ cup black poppy seeds

  • 3 tsp grated unwaxed lemon rind

  • 1 cup greek yoghurt

 

METHOD

  1. Preheat oven to 180 degrees Celsius

  2. Prepare a loaf tin by lining with greaseproof baking paper

  3. Blend the oats to a fine texture

  4. Whisk eggs then add greek yoghurt, honey, lemon juice and rind

  5. Add liquid mix to oats, add baking powder, salt and poppy seeds

  6. Pour mixture into prepared loaf tin

  7. Bake for 30-35 minutes

  8. Serve with choice of sides and enjoy!
