Scrambled Herby Tofu

Lemon Poppyseed Loaf
INGREDIENTS

4 eggs
-
2.5 cups gluten free oats
-
½ cup honey
-
2.5 tsp baking powder
-
Pinch of salt
-
¼ cup lemon juice
-
¼ cup black poppy seeds
-
3 tsp grated unwaxed lemon rind
-
1 cup greek yoghurt
METHOD
-
Preheat oven to 180 degrees Celsius
-
Prepare a loaf tin by lining with greaseproof baking paper
-
Blend the oats to a fine texture
-
Whisk eggs then add greek yoghurt, honey, lemon juice and rind
-
Add liquid mix to oats, add baking powder, salt and poppy seeds
-
Pour mixture into prepared loaf tin
-
Bake for 30-35 minutes
-
Serve with choice of sides and enjoy!
