Kale soup

(makes 4 servings)


  • 3 cloves garlic

  • 2 potatoes

  • 2 medium onions

  • 1 bag kale – 200g

  • 2 tsp black pepper

  • 1 cup cream

  • 2 tablespoons butter

  • 1 pint chicken stock

  • Additional milk/cream/water

  • Salt to taste



  1. Chop potatoes into small chunks and boil for 4 minutes,

  2. Finely chop the onion and fry with the crushed garlic and black pepper for about 5 minutes then add the potatoes and butter and cook until browned

  3. I steam the kale for about 3 minutes and then add to the pot or you could add it to the pot and cook for a few more minutes,

  4. Add everything to a large pot, heat and mix for about 2 minutes,

  5. Remove from stove and blend to your preferred consistency,

  6. Add more water or milk if you prefer a less thick soup,

  7. Serve, season and enjoy.
