Apricot jam cookies

(makes 15)

INGREDIENTS

  • 1/3 cup butter

  • 1 egg

  • 1/3 cup honey

  • 6 tblsp marmalade (or apricot)

  • 1 cup coconut flour

  • 1/2 cup oats

  • 1/2 cup flax

  • 1 tsp baking powder

 

METHOD

  1. Preheat oven to150 degrees celcius.

  2. Prepare a baking tray with a sheet of baking paper

  3. Slightly melt the butter

  4. Mix all ingredients together

  5. Spoon out onto tray leaving about 3cm gap bewteen each one, sometimes they spread quite a bit

  6. Bake for about 10 minutes 

  7. Remove off tray when finished and place on a plate, once cooled they become crunchy.
