Marmalade chocolate bites 

(makes 12)



  • 2 eggs

  • 2 tblsp maple syrup

  • ½ cup almond flour

  • ½ cup coconut flour

  • ¼ cup flax



  • Jar of orange marmalade

  • 200g 70% dark chocolate



  1. Preheat the oven to 180 degrees celsius

  2. For the cakes, place a pan on the stove with water in and bring to boil

  3. In a glass bowl mix the eggs and maple syrup, once the pot is boiling put the glass bowl on to of the pan, but so the bowl does not touch the water

  4. Beat continuously for about 5 minutes until the mixture is fluffy and well combined.

  5. Turn the heat off and add the flours and flax and mix until well combined

  6. Using a non stick cupcake tin, fill half of each hole and make sure the top is flattened and level

  7. Bake in the oven for 10 minutes, remove and set aside on a plate for later use

  8. When the cakes are cooled, top each one with a layer of marmalade and set asde on a plate

  9. Break the chocolate into separate cubes and place in a heatproof bowl

  10. Bring some water to the boil in a pot, reduce the heat so the water is simmering and place the bowl of broken chocolate on top of the pot, but ensure it is not touching the water, stir until everything is fully melted

  11. Another option which some people find easier is to place a bowl with the chocolate in into the microwave for about 1 and half minutes to melt the chocolate

  12. Once the chocolate is melted, pour over the cakes and allow to cool and set, then store in the fridge
