Crispy gingerbread cookies
(makes 14)
INGREDIENTS

1 cup almond flour
-
½ cup coconut flour
-
½ tsp baking powder
-
1/4 tsp baking soda
-
1 tsp ground cinnamon
-
½ tsp ground nutmeg
-
1/8 tsp ground cloves
-
1 tblsp fresh ginger
-
3 tblsp honey
-
3 tblsp coconut oil, melted and cooled

1 tsp vanilla extract
METHOD

Preheat the oven to 150 degrees celcius.

Prepare a baking tray with baking paper on it

Spoon out and melt the coconut oil in a microwave for about 1 minute

Chop the ginger as finely as you can or grate it
-
Mix all the ingredients together and mix well
-
Spoon out the mix and place on the baking tray in small piles, make sure to leave lots of space between each spoonful as they spread out while cooking in the oven

Bake for 10 to 14 minutes or until browned around the edges.

Allow cookies to cool and enjoy!
