Onion and garlic roasted mash potato

(Serves 6-8)

INGREDIENTS

  • 5 large white potatoes

  • 5 white onions

  • 5 cloves garlic

  • 2 tblsp butter

  • milk

 

METHOD

  1. Preheat the oven to 200 degrees Celsius

  2. Place potatoes on a plate and microwave for 15 minutes

  3. While they are cooking chop the onions and fry with crushed garlic in olive oil until soft and well cooked

  4. When the potatoes are done, place in a baking tray and in the oven to bake for about 30 minutes until they turn brown

  5. Remove potatoes from oven and slice in half but be careful! They are hot!

  6. You can let them cool a bit or use a kitchen towel to hold them in your hands and then scoop out the softer middle into a bowl

  7. Mix together the onion mix, potatoes and butter, then add milk to your preferred consistency

  8. Serve and enjoy!

(A quicker option for this recipe is to not bake the potatoes but just do them longer in the microwave or on the stove until they are soft)
