Garlic beetroot humus
INGREDIENTS
-
1 can drained chickpeas
-
1/4 cup tahini
-
2 tbsp fresh lemon juice
-
4 tbsp olive oil
-
1 tsp ground cumin
-
1 tsp cayenne pepper
-
2 tsp black pepper
-
Water from chickpea can
-
½ tsp salt
-
3 tsp mixed herbs
-
1 tsp honey
-
5 cloves garlic, crushed
-
1 large beetroot
METHOD
-
Drain the can of chickpeas and pour into a frying pan

Crush the garlic and add to the chickpeas along with all the other ingredients, except the water, lemon juice and tahini
-
Mix thoroughly then fry on medium heat until it is all soft, about 15 minutes
-
Remove and place in a blender with the water, tahini and lemon juice and blend well (depending on you blender size, you might have to do it in batches)
-
Serve with vegetables of your choice, and you can add a sprinkle of herbs over the top if you wish
