Garlic beetroot humus


  • 1 can drained chickpeas

  • 1/4 cup tahini

  • 2 tbsp fresh lemon juice

  • 4 tbsp olive oil

  • 1 tsp ground cumin

  • 1 tsp cayenne pepper

  • 2 tsp black pepper

  • Water from chickpea can

  • ½ tsp salt

  • 3 tsp mixed herbs

  • 1 tsp honey

  • 5 cloves garlic, crushed

  • 1 large beetroot



  1. Drain the can of chickpeas and pour into a frying pan

  2. Crush the garlic and add to the chickpeas along with all the other ingredients, except the water, lemon juice and tahini

  3. Mix thoroughly then fry on medium heat until it is all soft, about 15 minutes

  4. Remove and place in a blender with the water, tahini and lemon juice and blend well (depending on you blender size, you might have to do it in batches)

  5. Serve with vegetables of your choice, and you can add a sprinkle of herbs over the top if you wish

  6. Enjoy!
