Fruity oat bites

(makes 16 )


  • 2 tbslp solid coconut oil

  • 2 tblsp honey (optional)

  • 1/3 cup pumpkin seed

  • 1/3 cup sunflower seeds

  • ½ cup flaked coconut

  • 1 cup rolled oats

  • 2/3 cup dried chopped apricots

  • 2/3 cup Raisins

  • 2 mashed very ripe bananas

  • Pinch of salt



  1. Line a 20cm square baking tin with baking paper or use silicone cupcake bases and preheat the oven to 170 degrees Celsius

  2. Melt the coconut oil in a bowl in the microwave for about 1 minute

  3. Mash the bananas in a bowl

  4. I chop the raisins as a group into smaller pieces, because the ones are use are quite large

  5. Mix all the other ingredients with the mashed bananas

  6. Pour into prepared tin and gently flatten to about 1.75cm deep or spoon out into silicone case (I prefer this option as they are easier to handle and quicker to make)

  7. Bake for 20 minutes

  8. Remove and allow to cool then tip it out the tray onto a board and chop into squares into storing in a closed container.
