Cashew date balls

(makes 20 medium balls)

INGREDIENTS

  • 2 cup cashews

  • 2 1/2 cup oats

  • 1.5 cup dates

  • 2 tsp vanilla essence

  • 2 tblsp roasted flaked almonds

  • 4 tsp cinnamon

  • 1/4 cup hot water

Drizzle

  • 1 tblsp Coconut oil - melted

  • 2 tblsp Honey

  • 1 tsp Cinnamon

 

METHOD

  1. Heat the oven to 20 degrees Celcius, in a pan, roast the cahsews dry, for 20 minutes, chop the dates into small chunks and add to a food processor or use a hand blender and bowl

  2. To the dates bowl, add the  water, vanilla and cinnamon and grind into a paste, then separately in a food processer blend the cashews & oats into a chunky mixture.

  3. Mix together both the dry and wet ingredients, if it seems a little too wet and sticky, and a little more oats to the mixture

  4. Roll tightly into balls  and place on a prepared plate or board

  5. Roll tightly into balls and place on a prepared plate or board, then make the sauce by mixing all ingredients together and drizzle over the top, store in the fridge to cool, then enjoy!

  6. Store in a container in the fridge
