Cinnamon Raisin Loaf
INGREDIENTS

2 eggs
-
2 tblsp flax meal
-
1/3 cup melted coconut oil
-
3 tblsp coconut milk
-
1 tsp vanilla extract
-
1½ cup coconut flour
-
1 tsp baking powder
-
½ tsp baking soda
-
1/4 tsp sea salt
-
2 tblsp honey
-
1/2 tblsp cinnamon
-
½ cup raisins
METHOD

Pre-heat your oven to 180 degrees C.

Line an 8x4 in loaf tray with greaseproof baking paper

Melt the coconut oil in a small bowl in the microwave for up tp 2 minutes
-
Add all ingredients to a large bowl and mix until well until combined then fill the loaf tin with the mix
-
Place in oven and cook for 30 minutes until a toothpick inserted comes out clean.

Remove and let cool for 5-10 minutes, cut and enjoy!

Store for about 10 days
