Cinnamon Raisin Loaf

INGREDIENTS

  • 2 eggs

  • 2 tblsp flax meal

  • 1/3 cup melted coconut oil

  • 3 tblsp coconut milk

  • 1 tsp vanilla extract

  • 1½  cup coconut flour

  • 1 tsp baking powder

  • ½  tsp baking soda

  • 1/4 tsp sea salt

  • 2 tblsp honey

  • 1/2 tblsp cinnamon

  • ½  cup raisins

 

METHOD

  1. Pre-heat your oven to 180 degrees C.  

  2. Line an 8x4 in loaf tray with greaseproof baking paper

  3. Melt the coconut oil in a small bowl in the microwave for up tp 2 minutes

  4. Add all ingredients to a large bowl and mix until well until combined then fill the loaf tin with the mix

  5. Place in oven and cook for 30 minutes until a toothpick inserted comes out clean.

  6. Remove and let cool for 5-10 minutes, cut and enjoy!

  7. Store for about 10 days
