Chocolate chia nut cookies

(makes 18)


  • ½ cup almond flour

  • ½ cup of coconut flour

  • 1 tblsp flax

  • 1/3 of a cup of pure maple syrup

  • 1/4 of a cup chopped dates

  • 1/4 of a cup almond milk

  • 3 heaped tablespoons of raw cacao powder

  • 3 tablespoons of chia seeds

  • 2 tablespoons of coconut oil



  1. Preheat the oven to 180 degrees celcius

  2. Prepare a baking tray with baking paper

  3. Add the chopped dates to a small bowl with a little hot water, to soften them for blending

  4. Place all the ingredients in a blender and blend until a sticky cookie dough forms.

  5. Scoop out a spoon into your hands, roll it into a ball and then flatten it onto the baking tray so that they are nice and thin.

  6. You can make them as big or small as you wish

  7. Bake for about 10-12 minutes until the cookies are firm and starting to slightly brown.

  8. Then leave them to cool and enjoy!
