Chocolate banana cake


  • ½ cup gluten free oats

  • ½ cup coconut flour

  • ¼ cup flax meal

  • ½ cup unsweetened cocoa powder

  • 1 tsp baking soda

  • ½ tsp baking powder

  • 3 tblsp honey

  • ⅓ cup coconut oil

  • 2 very ripe bananas

  • 1 tsp vanilla extract

  • 1 tsp apple cider vinegar

  • 2 tblsp water



  1. Preheat the oven to 170 degrees Celsius and prepare a long loaf tin with baking paper or I use a small round tin about 3in in diameter

  2. Place the dry ingredients in a bowl and whisk together.

  3. Mash the bananas with a fork then add melted coconut oil, vanilla extract, apple cider vinegar, and water and mix well

  4. Pour the wet ingredients over the dry ingredients and stir until combined.

  5. Pour the batter into the prepared pan and bake for 30 minutes (or 45 mins if you are using a bigger tray) until a toothpick inserted in the middle comes out clean.

  6. Remove from oven and gently lift using the baking paper and place onto a board

  7. Let to cool then remove paper and slice as preferred.
