Chocolate Peanut Butter Ice Cream

(Serves 5)

INGREDIENTS

  • 2 fresh bananas 

  • 1 frozen banana

  • 6 tblsp 100% peanut butter (smooth or chunky)

  • 2 tblsp natural cocoa powder

  • 1/2 cup almond milk

  • 1 bar dark chocolate

  • Small handful pecans and other mixed nuts

  • 2 tblsp honey

 

METHOD

  1. Place 5 chocolate squares and the nuts into a plastic bag and use a rolling pin to gently hit and crush them into small pieces/crumbs for toppings, or if you have a machine blender that can crush them quicker, you could use that instead

  2. Before freezing the banana, peel and chop into pieces, then freeze in a small bag overnight, this is much easier to use once frozen.

  3. Peel the fresh bananas and chop into pieces and add to a blender with the frozen pieces

  4. Add the powder, milk, peanut butter and honey to the blender

  5. Break the remaining chocolate pieces up and place in a small bowl,  microwave for 1 min 30 secs to allow the pieces to mostly melt, remove from microwave and mix well to ensure its all melted, then add this to the blender and mix until well combined

  6. If you think the consistency is too thick, you can add a little more milk until your preferred thickness

  7. once finished blending add the crunchy chocolate an dnut pieces and mix by hand into the mixture

  8. Spoon the mixture into small serving size dishes or boxes

  9. This can be enjoyed straight away or place the boxes in the freezer to allow to set hard or in fridge for a softer consistency
