Choc chip banana squares

(makes 32)


  • 4 ripe bananas 

  • 1 ¾  cup whole wheat flour

  • ½ cup almond flour

  • 1/4 cup coconut oil

  • 1/4 cup milk of choice

  • 1 tsp baking soda

  • ½  tsp salt

  • 1 tsp cinnamon

  • ½ cup cacao nibs

  • 1/3 bar dark chocolate or 1 cup chocolate chips

  • 5 tblsp maple syrup

  • 2 eggs


  1. Heat oven to 180 degrees C.

  2. Spray or cover with greaseproof paper a 40×25cm baking tray

  3. Peel bananas and mash well, on a large plate I find easier, then stir in all other ingredients except the chocolate until well combined.

  4. Gently mix in the cacao nibs

  5. Spread the batter into the prepared tin and spread out evenly, don’t worry if it looks a bit thin, it will rise enough

  6. With the large side of the grater gently grate the dark chocolate to sprinkle over the top, grate as much as you prefer but you don’t actually need that much, or you could simply sprinkle over mini chocolate chips

  7. Bake for about 15 minutes, until a toothpick/baking spike inserted in comes out clean.

  8. Remove from the oven and allow to cool, transfer to a chopping board and cut into squares

  9. Enjoy your treats!
