Chocolate coconut balls

INGREDIENTS

  • 2 cups desiccated coconut

  • 1/2 cup solid coconut oil

  • 2 tblsp maple syrup

  • 1 tsp vanilla essence

  • 1 packet dark chocolate (for melting)

 

 

METHOD

  1. Prepare a baking tin with some baking paper 

  2. Melt the coconut oil for 1 minute in the microwave and mix with the rest of the ingredients, except for the chocolate bar

  3. Normally this mixture is good to work with, but if the air is quite hot, just place the bowl in the fridge for about 5 minutes so the mixture can cool and harden a little, and is easier to work with

  4. Roll into balls of preferred size and place on baking sheet in a tin or anything flat which will fit into your fridge 

  5. Place the tray in the fridge for about 20 minutes to allow the balls to completely cool and harden

  6. Just before taking it out the fridge, break the chocolate into squares and place in a bowl

  7. You can either microwave the bowl for a minute or place in a bowl over a pot of boiling water on the stove, which takes a little longer

  8. Heat for about 1 minute until chocolate starts to melt, then mix it well to encourage it all to melt, but do not overheat as the chocolate thickens and burns and then you will not be able to use it, and it tastes terrible

  9. Take the balls out the fridge and gently roll in the melted chocolate with the help of a knife, or spoon to cover any gaps, then place them back on the tray and into the fridge for the chocolate to harden

  10. Do not use a plate to put them on in the fridge, because when the chocolate hardens is glues to the plate and is difficult to remove, so use the tray with baking paper for ease of removal. Enjoy!
