Carrot cinnamon cookies

(makes 18)

INGREDIENTS

  • 1 cup gluten free oats 

  • ¼ cup flax meal

  • ½ cup coconut Flour

  • 2 tsp baking powder

  • 2 tsp cinnamon

  • ¼ tsp all Spice

  • ¼ tsp nutmeg

  • 1/8 tsp salt

  • ½ cup coconut oil

  • 2 Eggs

  • 2 tsp vanilla extract

  • ½ cup honey

  • 1.5 cups grated carrot (1 large carrot)

  • ½ cup chopped walnuts

 

METHOD

  1. Heat oven to 180 degrees Celsius and line baking tray with baking paper

  2. Mix together the oats, coconut flour, baking powder, salt, cinnamon, all spice, nuts and nutmeg.

  3. In a large bowl slightly melt the coconut oil in the microwave, about 30 seconds, then add the vanilla, egg and honey.

  4. Add the dry ingredients to the wet ingredients and continue to mix.

  5. Grate the carrot and add to the mixture

  6. Place in the fridge for about 15min.

  7. Scoop out spoonfuls onto the baking tray and press slightly leaving spaces between each cookie

  8. Bake for 15 minutes then cool and enjoy
