Cabbage, apple & nut salad

(serves 3)

INGREDIENTS

  • 1/3 red cabbage

  • 1 red apple

  • 2 spring onions

  • ½ cup chopped dates

  • 2 tlsp sesame oil

  • 1 tblsp soy sauce

  • ½  tblsp honey

  • Black pepper

  • Water

  • ¾  cup chopped cashews

 

METHOD

  1. Chop the cabbage into small pieces and boil in medium pot with water for 7 minutes

  2. Chop the apples, spring onions (remove the ends and top leaves) and dates into small pieces and add to the pot along with black pepper, oil and sauces and allow to boil for 2 minutes

  3. Turn off the heat and add chopped cashews and honey, mix well

  4. Serve as a side salad and enjoy
