

Blueberry banana cupcakes
(makes 16)
INGREDIENTS

1 tsp baking powder

3 bananas
-
1 cup blueberries
-
1 tsp cinnamon
-
1/4 cup coconut oil
-
1/2 cup ground almonds
-
1.5 cups desiccated coconut

1 tsp vanilla essence
-
3 tblsp flax meal
-
2 tblsp sunflower seeds

3 tblsp maple syrup
METHOD

Preheat oven to170 degrees Celsius.

Mash the bananas first in a bowl

Melt the coconut oil (in a microwave or in a bowl over a boiling pot)

Chop the blueberries in half then mix together all the ingredients
-
Ensure you do not mash down the blueberries

Pour into cupcake cases (I use a silicone case set so I do not need paper cases or oil) bake for about 30 minutes, until skewer comes out clean.

Let cool for a few minutes before turning out onto a large board
