Blueberry banana cupcakes 

(makes 16)

INGREDIENTS

  • 1 tsp baking powder

  • 3 bananas

  • 1 cup blueberries

  • 1 tsp cinnamon

  • 1/4 cup coconut oil

  • 1/2 cup ground almonds

  • 1.5 cups desiccated coconut

  • 1 tsp vanilla essence

  • 3 tblsp flax meal

  • 2 tblsp sunflower seeds

  • 3 tblsp maple syrup

 

METHOD

  1. Preheat oven to170 degrees Celsius.

  2. Mash the bananas first in a bowl

  3. Melt the coconut oil (in a microwave or in a bowl over a boiling pot)

  4. Chop the blueberries in half then mix together all the ingredients

  5. Ensure you do not mash down the blueberries

  6. Pour into cupcake cases (I use a silicone case set so I do not need paper cases or oil) bake for about 30 minutes, until skewer comes out clean.

  7. Let cool for a few minutes before turning out onto a large board
