Bean Chilli

(serves 4)

INGREDIENTS

  • ¼ cup olive oil

  • 2 onions chopped

  • 2 green peppers

  • 5 garlic cloves

  • 1 tblsp cayenne pepper

  • ½  tblsp paprika

  • 2 tsp oregano

  • 1 can black beans

  • 1 can kidney beans

  • 1 can chopped tomatoes

  • 2 spring onions

  • 1 can sweetcorn

 

METHOD

  1. Chop the onions and peppers and add to a large frying pan with olive oil and cook until soft and browning

  2. Crush the garlic and chop the spring onions

  3. Add the rest of the ingredients to the pan and allow to cook for a further ten minutes

  4. Once finished, eat on its own, with rice or with sweet potatoes and guacamole (another recipe on this site)
