


Bean Chilli
(serves 4)
INGREDIENTS

¼ cup olive oil

2 onions chopped
-
2 green peppers
-
5 garlic cloves
-
1 tblsp cayenne pepper
-
½ tblsp paprika
-
2 tsp oregano
-
1 can black beans
-
1 can kidney beans
-
1 can chopped tomatoes
-
2 spring onions
-
1 can sweetcorn
METHOD
-
Chop the onions and peppers and add to a large frying pan with olive oil and cook until soft and browning

Crush the garlic and chop the spring onions
-
Add the rest of the ingredients to the pan and allow to cook for a further ten minutes

Once finished, eat on its own, with rice or with sweet potatoes and guacamole (another recipe on this site)
