BBQ pulled jackfruit

(serves 4)


Jackfruit mix:

  • 2 cans green jackfruit

  • 2 white onions

  • 3 garlic cloves, minced

  • 25 tsp paprika

  • 1 tsp cinnamon

  • 1 tblsp sriracha

  • 1 can chopped tomatoes

  • 1 tblsp tomatoe puree

  • 2 tblsp balsamic vinegar

  • 1 cup water

  • 2 tsp mixed herbs

  • 1 tblsp chilli powder

  • 1 tsp mustard

  • Salt and black pepper

  • 1 tblsp white wine vinegar

  • 2 tbslp dark soy sauce

  • 1 tsp ginger powder



  • Handful green beans

  • rice

  • Half red cabbage

  • 1 tblsp maple syrup

  • ½ white onion

  • 100ml red wine vinegar

  • 1 cup water

  • 1 red apple

  • ½ tsp nutmeg

  • 1 tsp cinnamon

  • sesame oil



  1. Chop the onions and jackrfuit into small pieces and add to a large pan on the stove, drizzle with a little olive oil and cook for about 10 minutes until soft and browned

  2. Next, add the rest of the ingredients to the pan, along with half a cup of water, turn the heat down and simmer for 15 minutes to allow the jackfruit to soften and cook in with the flavours, keep checking on it, because it might run out of water quickly, and if it does just add a little bit more so it does not burn and stick to the bottom of the pan

  3. Once cooked, spread out onto a large oven tray and place under the grill for 10 minutes, until the top turns crispy, you don't have to do this ste, but it adds a great crispy texture to the mixture

  4. While that is cooking prepare the rest of the vegetables, by simply steaming the green beans and boiling the rice in a pot for hald an hour (or as insturctions per the packet)

  5. Next is to cook the cabbage, chop it very finely along with the onion and apple, add all of these to a pot with a drizzle of sesame oil and a little water, cook until softened, for about 10 minutes

  6. Next, add the rest of the ingredients, vinegar, cinnamon, nutmeg and maple syrup, cook for another 10 minutes, stirring it every few minutes, ensuring it does not stick to the bottom

  7. Once everything is cooked, servel into a bowl, sprinkle with sesame seeds and enjoy.
