Chewy breakfast cookies

(makes 11)


  • 2 bananas

  • 1 cup coconut flour

  • ½ cup flaked almonds

  • ½ cup flax meal (the one I use also has crushed nuts mixed with it)

  • ¼ cup raisins



  1. Preheat the oven to 170° Celsius and line a baking tray with baking paper

  2. Chop the raisins into smaller pieces (I prefer them smaller but if you want to keep them whole, that’s fine)

  3. Mash the banana and then add the rest of the ingredients

  4. Mix until well combined

  5. Form into preferred shapes and place on the baking tray

  6. Bake for about 15 minutes or until golden

  7. Remove and let them to cool for a bit and enjoy

  8. If you would like them a little sweeter you can drizzle them with a little honey while they are hot, so it soaks in
