Banana blueberry cake

INGREDIENTS

  • 1 tsp baking powder

  • 3 bananas

  • 2 eggs

  • 1 cup blueberries

  • 1 tsp cinnamon

  • 1/4 cup coconut oil

  • 1/2 cup ground almonds

  • 1 cup wholemeal flour

  • 1/2 cup dessicated coconut

  • 4 tblsp sunflower seeds

  • 1 tsp vanilla essence

  • 1 tblsp cider vinegar

METHOD

  1. Preheat oven to170 degrees celcius.

  2. Line a small rectangular tin with baking paper (mine was about 8in by 4in)

  3. Mash the bananas first in a bowl

  4. Melt the coconut oil in the mricrowave for 1 minute and stir until it has all melted well

  5. Mix together the rest of the ingredients except the blueberries

  6. Next, chop most of the blueberries in half, and gently stir into the mixture, making sure you do not mash down the blueberries

  7. Pour the mix into the tin and bake for about 50 minutes, until skewer comes out clean.

  8. Let cool for a bit before slicing.
