Balsamic bean spread


  • 1 can red beans

  • 1 Tablespoon Balsamic Vinegar

  • 1/4 cup Pumpkin seeds

  • 1 garlic clove, minced

  • 1/3 cup Fresh Basil, chopped

  • 1 roasted red pepper from jar

  • 1 yellow peppers

  • 2 Tablespoons Olive Oil



  1. Chop the yellow pepper finely, place on a baking tray with tinfoil and under the grill on medium for about ten minutes until it starts to turn brown

  2. Chop the roasted red pepper into small pieces and place into a bowl

  3. Combine the beans with all other ingredients in the bowl and mix well

  4. Blend the mixture roughly so the paste is not too smooth

  5. Add salt and ground black pepper to taste

  6. Serve in a bowl or plate with veggies or snacks of your choice

  7. Enjoy!
