Aubergine rolls 

(makes 7)


  • 12 baby tomatoes

  • 1.5 red onion

  • 1 tsp oregano

  • 1 aubergine

  • 2 handfuls spinach

  • Tblsp balsamic vinegar

  • Feta cheese



  1. Trim the aubergines and slice lengthways into 4mm thick slices.

  2. Fry onion and tomato with oregano, just near the end of it being cooked add balsamic vinegar.

  3. Cook the aubergine slices in a frying pan and a little olive oil for approximately 2-3 minutes on each side until soft and coloured

  4. Once cooked lay out on a plate

  5. Microwave chopped spinach for 1 minute

  6. Lay a little bit of the onion mix, spinach and cheese in the centre of an aubergine slice, roll up end enjoy.

  7. Great served as finger food snack or for parties.
