


Apple pie crumble
(makes 12)
INGREDIENTS

6 eggs
-
1 cup almond milk
-
½ cup coconut milk
-
½ cup dessicated coconut
-
1 tsp vanilla
-
1 tblsp cinnamon
-
Pinch of salt
-
4 tblsp honey
-
3.5 red apples
-
3 tblsp olive oil
Crumble
-
¼ cup coconut oil
-
¼ tsp nutmeg
-
1 tsp cinnamon
-
1 cup gluten free oats
-
1 cup almond meal/flour
METHOD

Preheat oven to 200 degrees Celsius and prepare a baking tray about 9inches x 13inches with a piece of baking paper and cover the base with olive oil

Peel and core the apples then slice them finely and lay out onto the tray, I like to do almost 2 layers with the extra pieces covering any holes

Place in the oven for 7 minutes

In a bowl combine eggs, coconut milk, coconut flour, vanilla, cinnamon, salt, and maple syrup, and mix well
-
Remove apples from oven and pour the batter mixture over the top
-
Mix the crumble ingredients together and sprinkle over the top
-
Bake for 25-30 minutes or until done and a spike comes out clean

Remove from oven and let cool for about 10 minutes then drizzle the top with maple syrup or honey

Serve it with coconut milk and a sprinkling of cinnamon.
