Apple pie crumble 

(makes 12)


  • 6 eggs

  • 1 cup almond milk

  • ½ cup coconut milk

  • ½ cup dessicated coconut

  • 1 tsp vanilla

  • 1 tblsp cinnamon

  • Pinch of salt

  • 4 tblsp honey

  • 3.5 red apples

  • 3 tblsp olive oil



  • ¼ cup coconut oil

  • ¼ tsp nutmeg

  • 1 tsp cinnamon

  • 1 cup gluten free oats

  • 1 cup almond meal/flour



  1. Preheat oven to 200 degrees Celsius and prepare a baking tray about 9inches x 13inches with a piece of baking paper and cover the base with olive oil

  2. Peel and core the apples then slice them finely and lay out onto the tray, I like to do almost 2 layers with the extra pieces covering any holes

  3. Place in the oven for 7 minutes

  4. In a bowl combine eggs, coconut milk, coconut flour, vanilla, cinnamon, salt, and maple syrup, and mix well

  5. Remove apples from oven and pour the batter mixture over the top

  6. Mix the crumble ingredients together and sprinkle over the top

  7. Bake for 25-30 minutes or until done and a spike comes out clean

  8. Remove from oven and let cool for about 10 minutes then drizzle the top with maple syrup or honey

  9. Serve it with coconut milk and a sprinkling of cinnamon.
