Apple cashew tart

(serves 6)

INGREDIENTS

Topping:

  • 3 apples

  • Juice from 1 lime

  • Cinnamon

  • A few cashew nuts

 

Base

  • 1 cup cashews

  • 2 tblsp coconut flour

  • 2 cups desiccated coconut

  • ½ cup virgin coconut oil melted

  • 2 tsp vanilla paste extract

  • ½ cup almond milk

 

Apple puree

  • 4 medium red apples

  • ½ cup hot water

  • 1 tblsp honey

  • ½ cup coconut oil

  • 2 tsp vanilla extract

  • 1 tsp nutmeg

  • 1/3 tsp salt

METHOD

  1. Preheat the oven to 190 degrees Celsius and prepare and line a 20cm diameter shallow tin or spray with non-stick spray

  2. Firstly, make the base of the pie and by adding the cashews to a mug with ¼ cup of boiling water and let to soak for about 15 mins to soften, (I buy my nuts from a great website - Buy Whole Foods Online at https://www.buywholefoodsonline.co.uk/cashew-nuts)

  3. Add the rest of the ingredients to a food processor or bowl If using a hand blender

  4. Then add the cashews and blend until a dough is forming, adding a little almond milk as you blend, as you don’t want to add too much and then it becomes too runny

  5. Once a sticky dough is formed pop it into the fridge for about 5 minutes to set a little

  6. Then remove the dough from the fridge and form into the base of the tin and up the sides

  7. Once the base is done, bake in the oven for only ten minutes until edges start to brown, then remove from the oven and set aside

  8. To make the apple puree, core and chop the apples into pieces and place in a pan with the coconut oil, a little water and bring to the boil, as it cooks keep stirring and add a little more water when it starts to dry up, after 2 minutes add the honey and cinnamon and keep cooking for a further 3 minutes until the apples are tender and soft

  9. You can either hand mash or use a blender to mix the apples into a paste, and adding the vanilla extract and nutmeg and you mix

  10. Once the puree is finished tip into the baked base and spread evenly

  11. Slice the remaining apples into thin pieces and toss with the lemon juice, arrange them on the top off the pie and sprinkle with cinnamon and crumbled cashew pieces

  12. Bake in the centre of the oven for half an hour until the apples start to brown

  13. Remove from the oven and set aside to allow to cool for ten minutes, if you want to add a little more sweetness, you can drizzle the top with honey or maple syrup

  14. Slice and serve with coconut cream, or ice cream, perfect for desert or breakfast

  15. Enjoy!
